First disclaimer - there are cans in this recipe.

Second disclaimer - this is incredibly good and everyone is going to want more than you prepare.

This list makes 2 servings, of backpacker appetites.

1 can of chicken breast meat (same shelf tuna is in/on, about 1.5" high and 3-4" diameter)

1 can of diced tomatoes (whatever you like - ours had basil, oregano, and something else in it, but there are spicy varieties, or just plain too)

1 small can of tomato paste

1 green bell pepper (small - 6" long or so)

1 zucchini (small)

1 sweet onion (small)

4 cloves of garlic

2-3 oz olive oil

parmisian cheese (however much you like)

basil (however much you like, fresh or dried in a shaker)



Chop the onion and garlic finely and simmer in olive oil until brown. Chop green pepper in roughly 1/2" squares. Chop zucchini in 1/2" coins, then slice in half. Simmer green pepper and zucchini in with the onions and garlic until you notice the zucchini slightly turning brown. Drain chicken can and mix in chicken. Heat for a minute or so, stir. Mix in diced tomatoes (whole can), stir.

This is where we ran out of room in the pot, so I put the tomato paste next to the fire to heat up in the can (lid opened already). Turn can to heat evenly.

Put the mix of stuff on your plate then mix in some paste. Add parmisian and basil if you want and enjoy!

I'm glad there were very few other people around, I think there was 1 other person with a dog that was on our side of the trail so we were pretty safe. The smell of simmering garlic and onions has a unique ability to attract the 2-legged wildlife out there  :D

Sounds good. Can't wait to try it out on the trail. You kow you can always use the packets of chicken and could dehydrate the tomato paste and diced tomatos and the veggies too which would lighten the ingrediants. Then just rehydrate at camp with cold or hot water before cooking.

I don't have access to a dehydrator yet. I have an All American canning system for garden veggies (one of these years if I get enough of a harvest that doesn't get eaten quick maybe I'll use it). I suppose a dehydrator would be a good thing to add to my collection also.
