The Mindful Carnivore is worth a look.  The author goes from being a vegan to taking up hunting and fishing.  The story of his two mentors is what I enjoyed most about the book...

my wife just bought mindful carnivore.  I'm going to start reading it when I get my thesis edits done in the next month or so.  she is reading it now and it has convinced her to at least eat a little bit of meat (she has been vegetarian most of the past year).
